One of the best parts is the smell when you're driving home. The whole car smells like strawberries. I picked the most strawberries; Denise was second and my mom and sister were last.
This is the first time we ever tried making strawberry shortcake from scratch. The shortcake was sweet and hot. It's definitely worth making, but it's ten times better if you pick the strawberries yourself.
Makes around eight shortcakes.
For the shortcakes:
2 cups plus 2 tablespoons of flour
1/2 teaspoon salt
1 tablespoon baking powder
5 tablespoons of sugar (3 for the shortcake dough and 2 for the tops)
1/2 cup sweet butter, frozen
1 large egg, beaten
1/2 cup milk or light cream or half and half
1 large egg white, lightly beaten
For the whipped cream:
1 cup of heavy, whipping cream
1 teaspoon vanilla
1 tablespoon of sugar
For the strawberry filling:
4 cups of strawberries, sliced
2 tablespoons of sugar
Preheat the oven to 425 degrees. Place parchment paper on a baking sheet.
Mix the flour, salt, baking powder, and 3 tablespoons of sugar in a bowl. Grate the frozen butter into the dry ingredients and mix together with your fingertips.
Whisk the egg into the cream, and slowly pour the liquid ingredients into the flour mixture. You may not need all of the wet ingredients. Just add enough to make the dough come together.
Flour a cutting board, and roll the dough until it's around 3/4 of an inch thick. Dip a glass in flour and cut out circles. When you can't make any more circles, re-roll the dough and start again. Place the biscuits/shortcakes on the baking sheet and brush the tops with egg white and sprinkle with sugar. Bake for 10-12 minutes.
In the meantime, puree a few strawberries with sugar, and cut the remaining strawberries in thin slices. Mix together.
Also in the meantime, prepare the whipped cream. (You whip the cream with the vanilla and the sugar-- mix until you get floppy peaks.)
Split the shortcakes while warm. Place the strawberry mixture on the bottom half of each cake, along with the whipped cream. Replace the top. Serve.
